Welcome to 30 Days on a Mediterranean Diet, our new blog series! It’s no secret that eating the Mediterranean way helps with heart health and weight loss. But fast-paced modern living makes it hard to stick to any diet, which is why each 30 Days on a Mediterranean Diet post will feature a healthy Mediterranean recipe.
How ‘bout a sweet treat to get the day started? You’ll be hard pressed to find a dish that’s as rich and sumptuous as this one when you are trying to eat healthier.
Featuring fresh apricot as the star – which is jam-packed with fiber, copper, potassium and vitamins C and A* – it hits all the right indulgent notes. Plus, since apricot is a carotenoid, it’s also a heart healthy** dish you can feel good about on all levels. Enjoy!
Ingredients
1 ripe apricot, halved and pitted
4 tablespoons regular plain or Greek yogurt
Honey (try wildflower or lavender)
1 tablespoon unsalted roasted pistachios, roughly chopped
